You are not an omnivore. You are a fat-burning animal that will tolerate a potato. You have an organ that exists solely to store a fat detergent between meals. You have a gland that makes lipase before the food arrives, because your body is expecting fat. You have a liver producing a litre of bile a day, and bile does nothing to a carbohydrate. You have lacteals, lymph vessels built to carry fat around the liver entirely and pour it into your blood near the heart. Nothing else you swallow gets that route. You have adipose tissue, an organ, holding months of fuel without complaint. You have brown fat, whose entire purpose is burning fat to keep you warm. You have ketone transporters in the wall of your brain, sitting ready. Gallbladder, bile, lipase, lacteals, adipose, brown fat, ketone transport. Now count the equivalent for glucose. Ninety minutes of it in your muscles and liver. No glucose organ. No reserve. No backup. Run low on fat and you go weeks. Run low on glucose and your liver builds more out of protein, because your body will not sit and wait for a potato. Carnivore does not cover it either. Carnivore is a shopping list, and it says nothing about which part of the animal you need. Eat nothing but chicken breast and white fish for a fortnight and you will be exhausted, ravenous and cold, surrounded by meat the whole time. Your liver caps how much protein it can handle. Week 11: the low background anxiety goes, and it turns out a good share of it was a glucose crash wearing a mood. Month 3: muscle learns to run on fat and spare its glycogen for when you actually need it. Training goes odd for a fortnight, then better. Explosive work is fine, because low rep sets barely dent glycogen and what they use comes straight back. If it does not come back, more butter. Month 4: ghrelin and leptin stop arguing. Food noise gone. You walk through a service station and none of it registers as food. Month 5: a full day without eating stops being an event. Discipline has nothing to do with it. You are running on the fat you already own, which is what the fuel switch was always for. Month 6: the floor, with a long way still above it. The first honest point at which anyone can say what this diet did for them. Skin, joints, mood, and the recovery between sessions. Month 9: whatever you had stopped mentioning to your GP because you were tired of the shrug. Year 2: linoleic acid has a half life in your fat tissue measured in years and it leaves on its own schedule. Two summers of animal fat and you stop burning in the sun. Thirty days is the queue, not the diet. If you already fast, already run low carb, are not carrying a decade of oxalate waiting to come out, and have not spent fifty years drinking engine lubricant from a bottle with a sunflower on it, you will move through all of that considerably faster. Six months minimum. Anything under that and you reviewed the trailer. And whatever went wrong on the way through, you already know the answer. It was more butter.
