I have not burned in six years of cutting out seed oils. I used to go scarlet in thirty minutes. Half northern European, and the wrong half turned up every summer. Shoulders like a boiled ham. A week of sleeping face down. Now I sit out through the middle of the day with nothing on my skin and come home brown. Your cell membranes are built out of the fat you eat. Twenty years of rapeseed oil and you have lined every cell in your body with the contents of a chip shop fryer. Rapeseed was a marine engine lubricant before anybody thought of putting it in a salad. It is polyunsaturated, which means it carries double bonds. Double bonds are where oxidation gets in. UV is an oxidation machine. Beef fat and butter have none of them. So the sun lands on a man made of rapeseed and does what sunlight has always done to rapeseed. It goes off. Rancid, in real time, on a lilo in Lanzarote. It lands on a man made of butter and beef fat and finds nothing to spoil. It just browns him. One man's story, and I know what a story is worth. But it makes mechanistic sense top to bottom, and thousands of people who cut the seed oils report the same thing without being told to look for it. That many people finding the same result, in the direction the chemistry predicts, stops being anecdote somewhere. I do not fear the sun any more. I bask in it for hours, and I do not have to slather a carcinogen on myself first to earn it.

ZOE was built by a man who spent years telling this country that supplements are a waste of money. ZOE sells a supplement. Concede Tim Spector his standing, because the joke does not work without it. Professor of genetic epidemiology at King's, thirty years of the biggest twin study in Britain, the most listened-to voice on food we have. He told The Times that the vast majority of food supplements are "a complete waste of money." Then ZOE launched Daily30+, a jar of dried plants you sprinkle on your dinner. Chicory root inulin, nutritional yeast flakes, quinoa, red lentils, powdered mushrooms, nine sorts of nut and seed. The first ingredient is a fermentable fibre, so the bloating that turns up within the hour gets sold back to you as evidence it is working. In September 2024 ZOE advertised it on Facebook with Steven Bartlett, an investor in ZOE, calling it real food with no ultra-processed pills. The Advertising Standards Authority ruled the advert misleading in May 2025, and upheld that ruling in March 2026. Spector announced he was stunned. Now the rest of the operation, which is worse. Close to three hundred pounds for the kit, and roughly the same again for the year. You wear a glucose monitor for a fortnight so the app can tell you which foods spike you. ZOE's own PREDICT data included 394 people wearing two monitors at the same time, and the two devices ranked the same meals differently. Personalised, then, to the sensor rather than to the person. Nobody has established what a healthy glucose response even looks like in someone who does not have diabetes. NHS England's own diabetes adviser has warned about strapping monitors to people who do not need them. Then the trial. ZOE tested its app, plus a coach, plus a nutritionist, against a group handed some general healthy-eating advice. It never tested whether personalised advice beats generic advice, which is the single claim the entire company stands on. Six hundred pounds for a sensor that disagrees with itself, a score nobody can define, and a powder to sprinkle on the food that was supposed to be the answer.

A German professor publishes a cure for obesity in 1882, and the cure, in plain print, is to eat more fat. His name is Wilhelm Ebstein, and he is no quack with a pamphlet and a mailing list but a serious academic physician. The bill of fare he lays out in his little book on corpulence would give a modern dietitian palpitations from the first line. Black tea in the morning, without a single grain of sugar. Bread, yes, but spread thickly with butter. And then at dinner, a soup made with bone marrow, followed by a good portion of meat, boiled or roasted, served in a fat gravy, with fat meat expressly preferred over lean, and only a small quantity of vegetables permitted alongside. Sugar and all sweet dishes are struck off the list entirely. Ebstein's reasoning runs directly against the calorie-counting arithmetic that was already, in his day, taking hold of the field. Fat in the diet, he argued, was not the thing that made a person fat. On the contrary, it was the thing that satisfied the appetite and let a patient eat less of everything else without the gnawing, grinding hunger that made the starvation regimes so unbearable and so useless. The real architects of corpulence, in his account, were the sugars and the starches. And the way to defeat them was not to add hunger to the fat man's misery but to feed him the fat that would quiet his appetite and let the surplus melt away. He was describing, in 1882, in sober clinical German, the exact mechanism that low-carbohydrate doctors would spend the following century rediscovering, one by one, and being ridiculed for each time. That fat sates and sugar drives hunger, and that telling a fat man to eat butter is not the lunacy it sounds like at all. A professor of medicine prescribed butter and fat gravy as the front-line treatment for obesity while Queen Victoria was on the throne. It worked well enough to fill a book that was still being argued over decades later. The twentieth century then spent a hundred years insisting, with total confidence, that the man had it precisely backwards.
