He cannot understand why his wife's Dashi tastes so delicious, or as the Japanese would say, so umami. The seaweed broth had a distinct flavor – almost savory, mild but also deeply satisfying. A taste, Ikeda hypothesized, distinct from the four basic tastes known at the time: sweet, bitter, salty, and sour. Determined to uncover the truth, Ikeda set out on a molecular expedition to reveal what constitutes this mysterious taste.
