S stands for 'stylize.' Without any stylization, Midjourney will create an image based solely on the prompt. Once you begin to add any level of stylization to the prompt, Midjourney will take over and add its own unique touches and styles to the piece. Therefore, once you reach a stylization level of 1000, the result could be completely different from what you initially sought as described by the prompt.
