1. The Greek myths and hymns are the works of poets storytellers, and playwrights, not people claiming to be prophets conveying the direct word of this or that deity. Yes, there are varying degrees of inspiration in these works on the roles, functions, and symbolism pertaining to various deities. 2. As a Platonist myself, this is my position. 3. Interpreting poems, hymns, and stories allegorically is not "just ignore the story." Implicit in your statement is the notion that these stories should be interpreted literally or not at all. Basically you're imposing a false binary.
Greek myths aren't the bible. You are projecting Abrahamic assumptions onto natural religions. Interpreting the myths literally is the fundamental point of failure in your (mis)understanding of non-Abrahamic religions. Platonists especially reject literal interpretations.

Secondly, in the polytheist view, the Christian god is just one god among many others. Nonbelievers have no need to engage in any transaction with this particular deity.

The state is very unlikely to take Germanic paganism as a serious religious tradition, as it's only a half century old and its total number of adherents is very tiny compared to the major religions. Sikhs get seen as legit because they have a sizable community and is long-established in terms of both belief and community infrastructure. Thus, "knives for me but not for thee!" Meanwhile, most modern pagan groups can't even build a single temple anywhere.
